More than 10 years ago, Pénélope Virag created concept restaurants in all four corners of her native Normandy. Behind this entrepreneurial adventure, today Traybon brings together the ensemble of its signature creations and core values under one brand. The name is a portmanteau of the English “tray,” the common thread in all of Pénélope’s creations, and the French “bon,” in reference to healthy, local, responsible food. “Innovative culinary concepts full of meaning and history”. Since spring 2021 , Le Réfectoire - D eauville inside Les Franciscaines has replaced plates with a pretty bamboo tray on which each menu is beautifully presented with ingredients of the neighbouring countryside. With its spirit of a modern cafeteria, its famous Sunday brunch, and its “after beach” evenings in summer, it has become a hit in Deauville. Its catering offer associates a homemade cuisine with unique recipes and a simple but refined presentation. Whether for restaurants, like The Shed within the former linen mill rehabilitated in 2023 by the municipality of Lisieux, or a pop-up eatery for private or professional services, no two projects are ever alike. Each has its own identity, and Pénélope loves to customise according to the location’s unique strengths. The serial creator most recently opened panoramic restaurant Hippodrome de Clairefontaine-Deauville offering an all-you- can-eat buffet, where everything is served to you on a platter, of course!
