Le Pavé d'Auge

After fifteen years of experience in Michelin-starred restaurants, Adrien Haye and Solène Robert jumped at the opportunity to take over this establishment in 2022. With his brigade, the passionate chef, 28, works with seasonal ingredients, almost exclusively Norman. The menu is “tightened” to guarantee quality produce according to arrivals: 4 appetizers, 4 main courses, and 4 desserts. To satisfy all tastes, the menu always lists fish or seafood, a traditional meat dish (cut of beef, poultry, spareribs, etc.), a vegetarian dish, and a chef’s special (sweetbread, hare à la royale, squab, etc.). The wine menu, with over 350 bottles, lists grands crus as well as lesser-known vintages. Solène presides over the dining room service in an elegant and warm atmosphere. The fireplace adds its charm, and on nice days, the terrace promises some sunny tables.
