The new owners, Valérie and Zoran Spasojevic, are perpetuating the four-decades-long reputation of L’Absinthe while modernising it with a diverse menu that features the richness of the Norman territory: meats to share, local fish and seafood platters, vegetables and cheeses from around the corner, and desserts updated to today’s tastes and made by the pastry chef. The style and spirit of this typically Norman building of the 15th and 17th centuries was preserved for an idyllic setting and a friendly, warm atmosphere.
